On Wednesday I am heading to Key West for a good friend's wedding. The last thing I need to be doing is cooking when there are clothes to wash and packing to do, but I got the bright idea to make this recipe for my plane snack. Procrastination is my middle name.
When I was growing up my parents always had plane snacks for us (food was a part of everything we did) so it's normal for me to have a stash of something in my purse. When you are going up in the air in a giant box of steel that could fall out of the sky at any moment, you might as well have a yummy snack to munch on to keep you calm. A glass of wine can't hurt either. Here's my version of a spicy, salty, nutty snack mix.
Sriracha Roasted Snack Mix
1/4 cup sriracha hot sauce
1/4 cup soy sauce
1/4 cup olive oil (you could substitute 2-3 tbsp melted butter for the oil, your choice)
1 tbsp brown sugar
1 tbsp sesame seeds
1 1/2 cups cashews (or any nuts you like)
1 1/2 cups almonds
1 cup pretzel sticks or nuggets
Heat the oven to 300 degrees. In a large bowl, add the first 5 ingredients and mix well. Add the nuts and pretzels and stir to coat. Spread the nut mixture evenly on a lined cookie sheet. Bake for 20 minutes, stirring after 10 minutes and after 20 minutes, then back for 5 minutes more (be careful not to leave in the oven too long or the nuts will get black and charred). Take out of the oven and sprinkle with extra sesame seeds and some kosher salt. Cool in the pan for 20 minutes then transfer to paper towels to continue cooling/drying. Store in an airtight container or if you're stashing in your purse/carry-on/beach bag, in Ziploc bags.
